SANDÍA HIGHBALL ½ oz lime juice ¼ oz ginger syrup 1 oz watermelon juice 1 oz Aperol 1 oz Tequila blanco float 1-2 oz seltzer Garnish: mint sprig Method: Combine all ingredients except seltzer into a shaker, add ice, and shake. Strain over a clear ice spear, add seltzer, and garnish. Seen on IG anatomyofadrink channel. He took the Sandia recipe, created in 2016 by David Valdez at Simbal (Little Tokyo, Los Angeles; now closed), and turned it into a highball by adding soda water.
